Paleo Chicken Lettuce Wraps

In true form, I'm attempting to kick the year off on the right foot and commit to eating cleaner and working out 3-4 times a week.  So far so good...but it is only the 9th!  Side note: I just realized that yesterday was my three year blogoversary.  Happy Day for me!!  ;)

Anyway...I made these chicken wraps for lunch the other day {as part of this 30-day Paleo challenge} and they were really good!  They had a nice crunch thanks to the walnuts and apple and were quite filling as well.

Here are the details:

1 chicken breast {grilled}
Half a green apple
1/4 cup chopped walnuts
1/4 cup raisins
1/4 cup mayo {If you are really strict, you would make your own.  If you're like me, you use vegenaise}
2 leafs of romaine lettuce
Dash or pepper

Simply chop all of the ingredients into bite size pieces and add to a medium size bowl.  Stir in the vegenaise until coated well.  Add to the romaine, pepper to taste, wrap and enjoy!

I normally never eat mayo, but the vegenaise was a good alternative.  I am sure the real deal {with all natural/organic ingredients} would be just fine though.

How many of you out there are Paleo?  I wouldn't say I'm following this diet 100%, but it's definitely opening my eyes to alternative meals.  I'm just really trying to focus on meat, veggies and some fruits right now...we'll see how it goes!

  1. These look awesome! My husband was paleo for a while but then stopped and gained all the weight back :(
    The diet is great but begins to feel really restrictive

    1. Eek! I could totally see that happening to me too which is why I'm trying it in moderation!

  2. These look so yummy! I will be adding this to our meal plan!

  3. Yum, I definitely want to try these out! We are definitely trying to get back to Paleo this year too, so if you come across any other great recipes, let me know! Also, I've made my own mayo a bunch of times and it's super super easy so you should totally give it a try sometime! :)

  4. YUM! These look delish. I bet you could substitute greek yogurt for the mayo (although I have no idea if that's paleo).

  5. Those wraps look so good! These are right up my hubby's alley since he's diabetic and has to watch his carbs. Thanks for the recipe!

  6. These look good! I think David would be a fan!

  7. Sounds delicious. I always add red grapes to this style of chicken salad. Such a good lunch!

  8. I keep hearing so much about Paleo but I think that when you live with someone (i.e. your husband) it is so much easier to commit to these diet changes if they are on board too. We'll see if I can convince him for the 30 day challenge!

  9. gonna have to copy this! we're doing no carbs for dinner this year. notice i didn't sign up for no can't be done!

  10. These look so so good! Good for you for trying out Paleo!

  11. I am so hungry right now and this looks so amazing! ha. I haven't ever done paleo....keep us posted!

  12. One I love chicken salad. Two I love mayo. But I love real mayo, so I am not sure how Paleo I could be. But your picture is so pretty that I might have to look more into this...

  13. Looks yummy and thanks for sharing! Instead of mayo, I often use avocado as a substitute - if you like it! I have made my own before and it was much easier than I thought, and it was amazing... but I like avocado more. :)

    My family has been Paleo for about 3 years now. When I found out I was gluten-intolerant, the good recipes all seemed to come from Paleo sources. (DH & I do Crossfit so we had heard about it already when we decided to go for it.) I'd say we're about 90%... we have dairy occasionally, and around holidays I make sweets that are gluten-free, but there are even really good dessert recipes now that are paleo. It takes some time adjusting, but I feel so great that I don't want to go back!

  14. These look absolutely amazing...definitely going to have to try them out!!

  15. This looks so yummy!!! And HAPPY BLOGIVERSARY!!!!! :)

    Hello Newlywed Life Blog

  16. Yum! Going to add this to my list for lunches!!
