Target Haul + Finds


If you follow me on Snapchat {schuelove} then you would have seen my recent Target haul.  They have SO many cute things right now...it's hard not to buy the whole store!  Plus, being at Target solo on a Friday night is pretty much my idea of a perfect night, am I right?!

Here are my recent purchases + some other notable finds...


Oh Joy! Plates: So cute and perfect for appetizers...plus they're dishwasher safe!

Olly Vitamins: I am a sucker for good packaging which is what caught my eye about this brand.  But more than that I've been trying to up my vitamin intake.

DV Sandals: Loving DV's shoe line for Target...so many cute options!

Threshold Cutting Board: Love the painted detail...also love this bottle opener.

Essie Ladylike Nail Polish: This is my new favorite neutral color.  Currently wearing on my toes!

One-Piece Bathing Suit: Target is killing it with their one-pieces right now.  They have a Vitamin A Soleil line too!

Other Finds + Buys

Did you know Dogeared has a jewelry line at Target?  I especially love their dainty earrings.


Got this dopp kit for Ryan...it reminds me of the Herschel brand.  You can't really see it but the zipper tag is orange, which makes it even more fun!

I snatched up the alligator throw pillow from the new Pillowfort collection.  There are SO many cute things!

If you love the Capri Blue Volcano scent from Anthropologie, then you should definitely check out Bella's Island Moonlight scent...smells very similar and for less!

Obsessed with this striped dress, this anorak jacket for April showers, and these fun leggings for working out.

Kale Shrimp + Avocado Salad with Miso Dressing



My mouth is watering just looking at this again...it's super fresh and oh so tasty!  The combination of kale, spinach, cucumbers and avocado is a great base for a nutritious salad.  Of course the zesty dressing and peanuts really take it up a notch to make this a total winner of a meal.

Recipe from Pinch of Yum

Ingredients //

For the salad:
1 teaspoon minced garlic
½ pound raw shrimp, tails removed
½ tablespoon butter
½ teaspoon chili powder
¼ teaspoon cayenne
1½ cups sliced avocados {2 small}
1 cucumber
4 cups chopped spinach or baby kale {we used both!}
fresh chopped cilantro for topping
crushed peanuts for topping

For the dressing:
1 1-inch piece of fresh peeled ginger
3 tablespoons oil
3 tablespoons lime juice {more to taste}
2 tablespoons agave nectar
1½ tablespoons white miso paste {I couldn't find white but the yellow/brown version worked just fine}
½ teaspoon minced garlic
¼ teaspoon salt

Method //
  • Heat the butter in a small skillet over medium high heat. Add the garlic and shrimp; sprinkle with the chili powder and cayenne directly in the pan. Saute for a few minutes on each side until the shrimp are no longer clear and have a nice golden color on the outside.
  • Cut the avocados in half; cut lines through the avocado vertically and horizontally and scoop the flesh out with a spoon. Peel and dice the cucumber. Chop the spinach or baby kale into small bite sized pieces. Arrange in a bowl with the shrimp.
  • Puree all the dressing ingredients together in a food processor until smooth. Taste and adjust to your preferences. Pour the dressing over the salad and serve immediately {or store the individual parts separately in the refrigerator until ready to serve}. Top with fresh cilantro and peanuts for crunch.

Friday Finds


Happy Friday!  I'm so glad the weekend is here...I'm currently wrangling two children solo and it will be nice to not be on a set agenda for the next two days!

Here's what I've been checking out lately...


These Madewell flare jeans, now $110.  I love the wash for spring and I'm so happy that this modern flare is back!  It's much more flattering on my body type!



This awesome Danish Slipper Chair...and you can't beat the price at $180!


Is your mouth watering yet?  Dying to try these coconut shrimp tacos with pineapple salsa!  In fact, I am drooling over most of these recipes from Cravings in Amsterdam!


This scalloped bikini that is an exact replica of this much more expensive version.  Total score!  Oh, and I'm loving the one-piece version too!


If you love the mesh trend for workout leggings, then definitely check these out for under $40...just ordered my pair!


I am obsessed with the whole house that House of Jade Interiors just blogged about.  It's modern yet still cozy for the family.

Our Valentine's Day


But first, I have to give a quick update on Mr. Wyatt, who turned 13 months this past Friday.


The quick update is that he is cruising like a maniac and sitting on the arm of his favorite everywhere chair like it's no big deal.  He loves the kitty and calls her "titty" and that very well could be his first official word.  He has a laugh like Elmer Fudd, loves his brother, flings himself backwards in the most dramatic fashion and is in the process of popping a molar.  Life with Wyatt is quite entertaining these days!


On Friday, Ethan had a Valentine's Party with his classmates and got spoiled rotten!


On Saturday, Ethan graduated from his swim class and then we had a mommy + Ethan date that included some circus animal ice cream!


That night we celebrated early with some bubbly and filet mignon, in the shape of a heart!


I love these two love bugs...who are already rocking their Easter jammies!  Oops!  I also adore the girl version of these pajamas, in case you're on the hunt for some good ones!


Sunday morning, my girlfriend had some mamas over for brunch and pampering.  Ethan loved it the most!  ;)







We celebrated that night with a bunch of our college friends who were in town for the long weekend...it was the best!

Friday Finds // Valentine's Edition


Happy Friday and Happy Valentine's Day Weekend!  Are you doing anything fun to celebrate?  Here are some last minute gift ideas and other things that have caught my attention lately...

Last, any motivation to workout is a good one!  I love the mesh on the side panels of these leggings.  I've been going to 6am spin class twice a week for the last month and while it's SO hard to get up that early, it feels really good to get it done for the day.

Skinny Kale + Parmesan Dip


With this past Sunday was the mother load of all eating events, I wanted to see if we could find something that was bit more healthy but still full of flavor.  Enter, this skinny kale + Parmesan dip.  I bet you'd be surprised to know that a major ingredient is cauliflower!  The creaminess comes from Greek yogurt.  And I bet your family and guests would have no idea!  

Definitely consider it for some of the upcoming awards show...this one is a winner!

Recipe via Food Faith Fitness

Ingredients//

1 Head of garlic
2 tsp Olive oil, divided
6 Cups Cauliflower, cut into bite sized pieces
1/2 Cup Onion, roughly chopped
1 1/3 Cup Parmesan cheese, grated (divided)
1/2 Cup Plain, Non-fat Greek yogurt
1 Tbsp 2% Milk
1 tsp Salt
1/4 tsp Smoked Paprika
Pepper, to taste
2 Cups Kale, packed

Method//
  1. Preheat your oven to 400 degrees.
  2. Cut the top of the head of garlic off, so that the tips of the cloves are exposed. Place it in center of a piece of tinfoil (shiny side in) and drizzle with 1 tsp of olive oil. Massage the oil into the garlic and then form the tinfoil around the garlic head tightly, like a little packet. Place on a small baking tray and cook until soft and fork tender, about 30-40 minutes.
  3. While the garlic roasts, place the cauliflower into a large, microwave-safe, lidded bowl and fill with a few inches of water. Microwave until fork tender, about 9-10 minutes. Drain the water out and set aside.  {Note: next time we think we'll roast the cauliflower to give the flavor more depth!}
  4. Heat the remaining 1 tsp of oil in a small pan over medium heat and cook the onion until golden brown, about 5 minutes. Set aside..
  5. Once the garlic has cooked, place the cooked cauliflower, onion, 1 cup of the grated Parmesan cheese, Greek yogurt, Milk, Salt, smoked paprika and Pepper in a food processor {or blender!}. Then, roughly chop 4-8 cloves of the roasted garlic, and add it into the food processor as well.
  6. Pulse the food processor until smooth and creamy.
  7. Once the dip is smooth, add in the kale and blend for just for a few seconds until the kale is broken down.
  8. Turn your oven to HIGH broil and pour the dip into a small oven-safe baking dish.  Sprinkle with the remaining 1/3 cup of grated Parmesan.
  9. Broil until golden brown and bubbly, about 7-10 minutes.
  10. Let cool for a few minutes and enjoy!

Favorite Wooden Toys



I am loving the revival of wooden toys...there are so many options out there and I wanted to share some of our favorites.


Hape: I love Hape...we have the mini kitchen and several of the food items to go along with it, like this toaster and hamburger & hotdog set.  PS...pretty sure Pottery Barn Kids and Hape collaborated because this set is identical to the toaster I have, but the colors are more neutral.

Plan Toys: Plan Toys has super cute and colorful toys for babies and kids.

Le Toy Van: If you're looking for some unique options, check out this brand.  I love this tea dessert set...a must for little girls!

Fisher-Price Wooden for Target: Target recently introduced a new line from Fisher-Price...the toys are a combination of plastic and wood but really cute!  I also love this whale toy.

Grimm's: Classic and solid toys...these are the real deal!  How adorable are these peg dolls?

Little Sapling Toys: Etsy is filled with wooden toy options, but I especially love this shop.  The donut is super cute!

Janod: Another bright and colorful brand...I've heard their puzzles are great too!

An honorable mention should go to Melissa & Doug...I feel they are a bit over commercialized, but they do have a ton of wooden toys as well.

Wyatt's Nursery


It only took a full year, but Wyatt's nursery is finally ready to be revealed.  This room was formerly Ethan's {you can check out his nursery here...seeing it now makes me so nostalgic!}.  

With Ethan, I planned for a bright and whimsical nursery.  With Wyatt, I wanted something a bit more rugged, though still whimsical!  I think I was able to pull it off...it's white, bright and modern too.  I really love it.
