Banana Cream Cheese Muffins


Tasty Tuesdays are back after a two week hiatus!  Did you miss us?

As it often goes in pregnancy, I suddenly had a craving for a sweet treat involving bananas.  I had no idea what it was {I know I didn't want banana bread} but I also didn't want something too complicated.  Enter: banana cream cheese muffins!  I actually had all the ingredients on hand, except cream cheese, so that was a plus.  It somewhat stemmed from the kind involving pumpkin, put of course that's sooo last season.



They were very pretty in the pan, but not so pretty on the plate.  But trust me...they were UBER delicious!  Even hubby agreed!

Banana Cream Cheese Muffins

Muffins 
Makes a dozen
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 3/4 cup white sugar
  • 1 egg
  • 1/3 cup butter, melted
  • 1 tablespoon vanilla extract
Cream cheese filling {I actually blame this part for my lack luster pictures.  Might try traditional cream cheese filling in the future...like a frosting mixture}
  • 4 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1 egg
Crumb topping {really the best part!}
  • 1/3 cup light brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon butter, melted
Preheat oven to 375 degrees. Grease muffin cups or line with muffin liners.

Combine 1 1/2 cups all-purpose flour, baking soda, baking powder and salt.

In a separate bowl, mash the bananas and then beat together the bananas, sugar, egg, melted butter and vanilla extract.  Combine banana mixture with the flour mixture until just moistened.

Spoon batter into prepared muffin cups (leave a little batter to top the cream cheese filling).

Create the cream cheese filling by mixing together all three of the ingredients. Pour a tablespoonful onto the batter in the muffin cups. Top the cream cheese with the remaining muffin batter.  {I found this mixture quite runny and not as dense as I would have liked, which is why the cream cheese kind of blends into the rest of the muffin.}

Create the topping: use a fork and mix together the brown sugar, 1/4 cup all-purpose flour, cinnamon and butter until crumbly. {You can add olive oil if you need more mixture.}  Sprinkle mixture over the batter.

Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean.


 Eat while they're warm...SOOO good!

  31. Hey, these looked SO good that I had to try making them last night, and they turned out beautifully! I added toasted pecans to the top of mine (along with the crumb) but other than that, followed your recipe. Wanted to mention that I beat the cream cheese/sugar/egg for about 2 minutes so it thickened up, and I didn't have any run in my muffins at all. Although the downside was that there wasn't really a cream cheese center, I think it just made the center moist.
    Anyway, thanks for sharing!
