Greek Yogurt Protein Pancakes



I've been on the hunt for a perfect protein pancake recipe and finally decided to wing it.  This is super simple and really really tasty!  The pancakes come out fluffy and lightweight...like a "real" pancake, but with none of the guilt.  The three main ingredients here are greek yogurt, egg whites and oatmeal...easy peasy!  

{ingredients}

2 cups greek yogurt
2 cups egg whites
2 cups oatmeal oats
2 tsp vanilla
2 tsp cinnamon
2 tsp baking powder

{method}

Blend all the ingredients in a food processor for about a minute or two until completely blended.  Let sit for 5 minutes to set.  Grease an electric griddle and make pancakes.  Top pancakes with peanut butter, bananas and agave syrup.  Makes about 4 servings.

  6. I make a version of these all the time and can't get enough. I do 1/2 mashed banana, 1/3 cup egg whites and 1 scoop protein powder. It combines to the consistency of regular pancake batter and cooks the same as well. So yummy and guilt free!

  20. I made these this morning and they are fabulous!! A note for others who want to try and don't have or feel like using the food processor, my rocket blender worked perfect and I cut the recipe down to a 1/4 of the original. I was only making enough for me and my 9 month old- who by the way LOVED his pancake bites :) Thank you for a healthy and TASTY pancake that I can feel good about serving my baby! He ate his right up plain without any toppings :) YUM!
