Banana Chunk Bread

 Have I mentioned that I have a sweet tooth lately?  Well I do!  And this hit the spot.  I'd like to think the banana made it a teensy bit healthy, but who am I kidding?  It was pure deliciousness and I loved every bite of it!

My secret is to not completely mash the bananas.  I like a little chunk of banana thrown into the mix and you can see the texture in the picture above.  

Banana Chunk Bread

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 cups mashed overripe bananas {about 4 bananas}.  I leave it more chunky.
  1. Preheat oven to 350 degrees F. Lightly grease a 9x5 inch loaf pan.
  2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.


I serve mine with some butter and cinnamon...super yummy!

This sounds so good, and I think you've nailed it with the texture! I wonder if you could make a couple quick substitutions to up the health factor? I'm more of a cook than a baker, so knowing me I'd try and botch it up... I guess better to leave what's good enough alone huh? :)

Now you have me craving banana bread. The recipe I use is fairly similar and I like it because besides the bananas, the ingredients are always in my house. I think I need to make some banana bread!
