Blueberry Compote Crepes

If there is nothing I love more, it's Sunday Brunch with yummy food!  Crepes are one of my all-time favorite...they're fancy and yet super easy to make!  A great take on the classic pancake.

Crepes
  • 1/2 cup flour
  • 2 eggs, lightly beaten
  • 3/4 cup milk
  • 1 Tbsp butter, melted
  • 1 Tbsp sugar
  • 1/2 Tbsp butter for pan
Combine all of the crepe ingredients in a bowl and whisk together.  Batter should be runny but start to thicken up.  Add a splash of milk, if necessary.  In a medium skillet, heat half a tablespoon butter and coat the entire the pan with it.  Slowly ladle about 1/4 cup of batter to cover the bottom of the pan.  Cook over medium heat until the edges become slightly dry, about 45 seconds.  With a spatula, check the bottom to make sure it's turning a golden brown.  Flip the crepe and cook for another 30 seconds until the bottom is golden brown.  Makes about 6-8 crepes.

Blueberry Compote
  • 2 cups blueberries {fresh or frozen}
  • 1/8 cup sugar
  • 1/4 cup orange juice
In a medium saucepan, combine blueberries, sugar and orange juice and bring to a simmer over medium heat.  Reduce heat to medium low and allow sauce to simmer for 5 minutes or until the blueberries begin to break down.  Remove from heat and allow to cool down so that the compote thickens.

Fold the crepes in thirds and cover with the blueberry compote.  Sprinkle with powdered sugar if desired.


How easy is that?  They're simply scrumptious and the perfect entree for brunch!  :)

  11. I love crepes. They are one of my fav breakfast treats. Strawberry is my ultimate fav and blueberry is the second pick. Never tried making my own though...just might have to try that.
