Mango & Chile Quesadilla

You're all in for a treat today because what I'm about to share is definitely a wining combination!  :)


About a year or so ago, Hubs and I were perusing the grocery store aisles when out of nowhere, we were offered a delicious quesadilla that had a sweet and spice kick to it!  I never thought that mangoes belonged in a quesadilla, but I was sorely mistaken.  This is an outstanding combination...and a great twist for summer.


A medley of veggies and fruits is what makes this dish delish.  Follow along...

Mango & Chile Quesadilla
  •  One diced mango
  • Two stems of diced scallions
  • Two small tomatoes
  • 1/2 cup chopped cilantro
  • Two whole roasted Anaheim chiles, diced
  • Three chipotle chiles, minced
  • 1/2 cup fresh Parmesan, grated
  • 1/2 cup sharp Cheddar, grated
  • 1/2 cup Queso
  • Flour tortillas
Prep and mix mango, scallions, tomatoes, and chiles in a large bowl.   Cut Anaheim chiles in half and remove seeds.  Cook on high on BBQ for 3-5 minutes per side until blackened.  Place peppers in bag to steam.  After 5 minutes, remove and pull off charred skins.  Add chiles to bowl.

Grate all three cheeses and mix into one bowl.

Heat electric to 350 and place tortilla on surface for one minute.  Flip tortilla and add cheese mix until melted.  Add veggie mix and second layer of cheese until melted.  Fold over tortilla and flip until browned on the outside. 


It's such a fantastic blend of flavors, both sweet and savory...not to be missed!

quesdillas are one of my favorite foods. I love this combo, thanks for sharing. Do you remember on Napoleon Dynamite when he said "make yourself a dang quesdilla." That is all I think about when I hear quesdilla now- I am weird I know:)
