Breakfast Pizza



You guys...we made an amazing discovery over the weekend: breakfast pizza!  It sounds kind of strange, and I was worried that the egg would be overpowering, but it was pure perfection.  I'm guessing the pesto and goat cheese had a little something to do with it, but I could easily eat this again and again...for breakfast or any meal of the day!

The eggs is added after the pizza ingredients are set and it's kind of poached once it's all done.  Not runny at all!  I can see adding even more tasty ingredients next time...perhaps some fresh basil on top?  

{Ingredients}

Pizza Dough {homemade or pre-made...ours was pre-made and it turned out just fine!}
Pesto {same as above}
Mushrooms {any kind will do}
Cherry Tomatoes
Goat Cheese
4-5 Eggs


{Method}

Preheat the oven to 500 degrees {hotter is best!}
Spread the pesto over the dough to cover--about 2 tablespoons
Crack the eggs in separate ramekins.  Slice the tomatoes in half and chop the mushrooms.
Scatter the tomatoes and mushrooms on top and drizzle with olive oil.  Pop into the oven and bake until the tomatoes are soft and the crust starts to brown.
Remove from the oven and poor the eggs on top, one at a time...you can remove some of the white of the egg to keep the pizza from getting too runny.  Sprinkle goat cheese on top.  
Return the pizza to the oven and bake for 3-5 minutes, or until eggs set.


Definitely enjoy right away...with some orange juice!  :)

  8. I tried making this before but my pizza crust started to burn before the eggs were cooked....I guess I will have to try again with a thicker crust.
