Huevos Rancheros


One of my favorite breakfast dishes is huevos rancheros...and one of my favorite times to eat breakfast is dinner!  This is a great meal, anytime of day...and so so delicious!  I love the combination of beans, cheese, and avocado...yum-o!

Huevos Rancheros
  • Flour Tortiallas
  • 1 can Black Refried Beans
  • Mexican Tomato Sauce
  • Egg
  • Sharp Cheddar Cheese
  • Tomato
  • Red Onion
  • Avocado
  • Cilantro
Decide how you like your eggs...I like mine over-medium, but you can have them scrambled or fried.  Heat up the beans and and prep cheese, tomato, red onion, and cilantro.  Pop two tortillas in the oven to warm up...and then assemble.  Tortillas + beans + sauce + cheese + tomato + onion + avocado + cilantro.  And voila!  Deliciousness on a plate!  You can also serve with tortilla chips as well.
