Beef and Broccoli

What what what?  Beef AND broccoli in one sitting...while I'm pregnant?!  Yes!  It's because it's that good!  This is a favorite of my parents-in-law's.  I give them full credit for this dish...it's one of their specialties!  The good news is, it's pretty simple too!

Ingredients:
  • 1 cup lean beef, like sirloin
  • 1 Tbsp corn starch
  • 1 Tbsp light soy
  • 2 Tbsp vegetable oil or light olive oil
  • 1 finely chopped clove of garlic {we use more!}
  • 2 cups of brocoli
  • 2 oz mushrooms
  • 1/2 tsp salt
  • 1/3 cup beef stock
Thinly slice the sirloin and combine with corn starch and soy sauce.  Let marinate at room temp for half hour.  Meanwhile, in a wok, heat up the oil on high.  Toss in garlic to simmer.  Add in the beef and keep the leftover marinade to the side.  Brown the beef and remove from pan.  Add in broccoli, mushrooms, beef stock and leftover marinade and stir fry for about 3 minutes until warm...stir often.  Once warmed through, add the beef back in and you're ready to serve!  If you want a little more sauce, you can add extra beef stock and corn starch to thicken it up.

Serve over white rice and voila!  Super yummy dish for any night of the week!  And this is definitely the best way to enjoy broccoli {coming from the girl who has major veggie aversions right now!}.  It's got a great Asian flair...and is great for a winter night in.

Bump Update: Sweet 16


How far along? 16 Weeks
Baby Size: An avocado-about 4.6" long and 3.5 ounces!  Baby can start to hear our voices now and is growing hair, eyelashes and eyebrows!  :)
Total weight gain/loss: Still about 2-3 pounds but the scale is starting to go up each day.
Maternity clothes? Still wearing leggings most days.  I did buy a pair of Heidi Klum maternity leggings on Amazon and there is NO stretch to them.  So strange considering who they're made for!
Stretch marks? No...rubbing lotions/oils/creams every day.
Sleep: I'm still sleeping well and still able to sleep on my tummy...with my left leg supporting more of the weight.
Best moment this week: Hearing baby's heartbeat!  That's right...I caved and bought a doppler.  I did not plan to do this, but I haven't seen the doc in almost 6 weeks and I couldn't stand not knowing what was going on!  I'm really glad I did and can put my mind more at ease now.
Miss Anything?  I think the occasional glass of wine still makes this list.  But nothing else for now...just enjoying this time and looking forward to all the next steps!
Movement: Nothing that I can say for sure.  Update: Last night I felt a kick!  It was different from anything I've felt before and was very distinct!  Really excited to start feeling Baby Schue bounce around on a regular basis!
Food cravings: Let's see...PB&J sandwiches, mango OJ, mint cookie ice cream...yep, pretty much anything sweet!
Anything making you queasy or sick:  I thought I was over my onion aversion but I had bruchetta with onion last week and was NOT pleased.  So I guess that's one still off the list!  And red meat doesn't sound appealing at all either.
Have you started to show yet: The little bump is growing...the weekly pictures are helping me see that!  But I get pretty bad bump envy when I see cute preggos around town!  :)
Gender prediction: I'm still thinking boy...but really don't have strong feelings either way!  We shall see!  {Cast your vote on my side bar! --->}
Labor Signs: Heck no...still have a ways for this one!
Belly Button in or out? Innie
Wedding rings on or off? On...the winter helps!
Happy or Moody most of the time: Happy!!!
Looking forward to: Finally seeing the doctor this week...yay!!  And finding out when we will get to learn the gender.  I'll be scheduling that this Thursday...unless he wants to sneak an ultrasound in...I wouldn't complain!!  ;)

 OH and thanks to my in-laws, we are happily looking for a crib!!  Any and all suggestions on what you recommend are welcome!

Happy Blogoversary to Me!

Today marks one year since I started this little blog!  I honestly can't believe how quickly one year has flown by!  I had no idea what I was doing one year ago...who I would meet and where I would find myself a year later.  What I know now is how invaluable this past year has been for me.  I've met so many amazing bloggers {virtually and in real life!}, been inspired by creative minds, and felt such an overwhelming support system.  I look forward to starting each day with all of you and ending my day back here as well.  I just can't imagine not being a part of this network.  So thank you for the love and encouragement and here's to another year full of fun recipes, inspired fashion, home projects, and baby progress!
